The Chia Seed is an amazing food. For centuries many have used the seeds for a host of different reasons. Native Americans would take a pouch of seeds and a gourd of water on their trips. The seeds were their food source and taken with the water they would hydrate their bodies for endurance. When you hydrate the seeds in water the seeds shell opens up and absorbs up to nine times its volume in water. This then forms a gel, which is called Chia Seed Gel. The gel helps keep your body hydrated. The gel is also 90% soluble fiber, which is beneficial for your digestive track. People use the seeds when they are involved in sports or physical activities for endurance.

The seeds were great, clean and ready to be added to recipes right out of the bag. However, the seeds were shipped to my house in just the plastic bag you see in the product picture. This led to a leak forming, no doubt from the "gentle" treatment that UPS is known for, and this led to significant spillage of chia seeds into the box, out of the box, all over my floors, etc. The majority of the seeds remained but about 1/10 were lost in transport.

I bought these Chia seeds as an experiment after reading that they are high in omega 3 and fiber. After my purchase I did more research and found that they were extensively used by natives in South America to help them stay hydrated when traveling long distances. The consistency of the gel when they are mixed with water as directed takes a little getting used to,(reminds me a little of clear fish eggs with no taste) but the gel mixes well in smoothies or hot cereal and I add the seeds to my gluten free baking for a fiber and nutrient boost. It didn't take long before I would just drink it plain if I didn't have something handy to mix it with. I was also very impressed with the seller's inclusion of a free sample of another type of chia as well as information about how to use it and links to more health info. I will definitely order more.

I make large batches of the gel with coconut water and store in the fridge. Per use, I mix a couple of tablespoons of the gel with cut up fruit and like a half spoonful of plain greek yogurt. The Chia gel really lets met get a lot of mileage out of just a bit of yogurt, both taste and consistency wise, without overpowering my belly with that "I just ate a bunch of dairy" feeling. I eat it and then can run or bike right after. During the winters I eat steel cut oats for breakfast, but that's a no go in the heat. This is a perfect high fiber, low glycemic summertime replacement. The 2lbs lasts my girlfriend and I about a month--ands that breakfast just about everyday. great deal at the price. Now, i'm looking for other inventive ways to use the seeds. Try them out!
